2 cups whole wheat flour
2 teaspoons baking soda
1/2 cup EVOO (extra virgin olive oil)
1/2 cup raw honey
1 cup raisins are optional. Add to the dry ingredients before adding wet ingredients.
Large Bowl or 4– cup measuring cup
2 Cups whole wheat flour
2 teaspoons baking soda
Stir with a fork to smash any of the baking soda so you cannot see it anymore.
Two Cup measuring cup:
EVOO (extra virgin olive oil.)
Raw Honey
Free Range chicken egg
Stir until you cannot see the egg anymore.
Add two cups liquid ingredients to the dry ingredients
mixture should look like cookie dough.
1 Tablespoon EVOO slathered over the pan (fingers are fine)
Dollop batter onto stainless steel cookie sheet
Lightly press down with a fork
Bake at 350 degrees for 8 minutes (keep a watchful eye—EVOO goes up in smoke easier than other oils.)
OPTIONAL: I like one whole pecan on top of each cookie. You can add one cup of raisins, too.
