Banana Nut Bread Healthy, natural diet of whole wheat, raw honey and EVOO recipe. No sugar, no butter, no white or bleached flour, just a wholesome banana bread made from real bananans! The concept of letting your food be your medicine and your medicine be your food.

Banana nut bread is part of a natural diet of whole wheat flour, raw hone and extra virgin olive oil. Eating whole foods make for a whole person.

Banana Nut Bread Healthy, Easy Whole wheat snack, No sugar kid snack. Cancer connection and diet connection is real. Get off of chemicals in your diet and reduce the chance of getting cancer. Banana Nut Bread Healthy, Easy Whole wheat snack, No sugar kid snack.

1/2 cup EVOO
1/2 cup Raw Honey (use the same measuring cup. The EVOO lets the honey slide out.)
1 free-range chicken egg (optional)
4 large bananas, peeled

1-3/4 cups of whole wheat flour or whole wheat flour
2 teaspoons of baking soda
1 cup whole, shelled pecans or your favorite nuts

Topping: 1/2 cup shelled pecans or your favorite nuts. (chopped or whole)

In blender:
Add EVOO, honey, and egg into blender.
Blend on low speed.
Add bananas half at a time, giving blender time to catch up.
Make sure the blender lid is on tight.
Makes 3-1/2-to-4 cups mix or add more banana.
Add the whole nuts into the blender and pulse blender a few times. *

*WARNING: If you blend too long, the nuts will disappear. (If your nuts are already chopped, don’t add here.)

In large mixing bowl or pot:
Blend whole wheat flour and baking soda with fork . (Put already chopped nuts in now or save for topping.)
Add blender ingredients and fold into flour with a rubber spatula. (no flour on bottom of bowl)
Smear glass pan with EVOO. (Extra Virgin Olive Oil) use your fingers to “smear”.
Pour mixture into one pound loaf dish. Bake for 50 minutes from a cold oven. Tooth pick inserted at the thickest place in the bread will come out clean when it is ready to eat.

12 by 9 Glass Cake Pan – Muffins:
Pour mixture into a 12 by 9 glass pan. Sprinkle about a 1/2 cup of chopped nuts on top to make it look pretty. Then press the nuts in lightly. Bake at 350 degrees for 40 minutes from a cold oven with a cookie sheet on top to prevent over browning.

Variation: Raisin Bread:
My friend, Sandi, hand mixes in one cup of raisins with the blender ingredients for a very tasty raisin bread.

NOTE:
These muffins freeze very well in freezer bags for a month or two.
